If you have bonbons more than a week before meals, this is when you start talking about your fridge or freezer.
Nothing can stay that isn't cold
“I rarely recommend that customers refrigerate or freeze bonbons, but not because I can't do that. I need a few steps to make sure the bonbons are as beautiful as when I shipped them. That means there is,” Coppel points out.
If you know you've been storing your bonbons for more than a week, a fridge or wine cooler is your best bet to keep your chocolate flavor fresh and powerful. It is recommended that most sauces wrap the bonbons tightly in plastic or airtight containers before storing them in the fridge.
“If you have a wine cooler, if you're lucky. This is the best appliance you can use to store your bonbons. According to written instructions sent by Coppel, you can use the bonbons to 16°C or 60°F (more accurate). If you want to, place the cooler in a relative humidity of between 60-70%.
A broken wine cooler, a more standard refrigerator will do it. Coppel warns that after putting the chocolate in the fridge, they need to be taken out and reach room temperature again before eating.
“Otherwise, the filling will be hardened and the flavor will not pass as much as necessary, as the flavor will block the perception of the flavor,” Coppel said.
How to travel with freezing with chocolate
Let's say you're sending a long distance of chocolate. Otherwise, should I keep my bonbon longer than two weeks? Freeze chocolate for up to one year. “Yes, we can do this,” Coppel points out.
